Tea Cakes and Honey Butter

Ingredients

  • 1 1/4 cup milk
  • 1 1/2 tsp dried yeast
  • 1/2 cup butter
  • 1 tsp salt
  • 1/2 cup brown sugar
  • 1/2 tsp cinnamon
  • 3 eggs
  • 3 1/2 cups flour
  • 1/3 cupcinnamon sugar
  • 1/2 cup butter softened
  • 2 Tbsp honey

Instructions

  • In a small pot, heat milk to lukewarm. Remove 1/4 cup of warm milk and place in a small bowl. Sprinkle yeast into bowl of warm milk and set aside for 5-10 minutes, until it blooms.
  • Meanwhile, add butter to remaining milk in the pot. Heat until the butter is melted.
  • In a large bowl, pour hot butter milk mixture over salt, 1/2 cup brown sugar, and 1/2 tsp cinnamon. Cool to lukewarm.
  • Add the yeast and eggs to milk mixture, beating well.
  • Gradually add flour and mix until the batter is smooth.
  • Cover dough with a damp cloth and let rise in warm place for 1 hour.
  • Meanwhile, preheat the oven to 350 F.
  • Grease a muffin tin. Fill each until 1/2 - 3/4 full.
  • Sprinkle 1 tsp of cinnamon sugar over each muffin.
  • Bake 20-25 minutes. Serve warm with honey butter (recipe below).

Honey Butter

  • Mix butter and honey. You can mess around with the sweetness to match your own preferences.
