In a small pot, heat milk to lukewarm. Remove 1/4 cup of warm milk and place in a small bowl. Sprinkle yeast into bowl of warm milk and set aside for 5-10 minutes, until it blooms.
Meanwhile, add butter to remaining milk in the pot. Heat until the butter is melted.
In a large bowl, pour hot butter milk mixture over salt, 1/2 cup brown sugar, and 1/2 tsp cinnamon. Cool to lukewarm.
Add the yeast and eggs to milk mixture, beating well.
Gradually add flour and mix until the batter is smooth.
Cover dough with a damp cloth and let rise in warm place for 1 hour.
Meanwhile, preheat the oven to 350 F.
Grease a muffin tin. Fill each until 1/2 - 3/4 full.
Sprinkle 1 tsp of
cinnamon sugar over each muffin.
Bake 20-25 minutes. Serve warm with honey butter (recipe below).
