Strawberry Sauce with Black Pepper, Kiku Corner 6

This strawberry sauce uses super ripe berries from the height of the summer. This recipe has a bit of an edge since it uses black pepper as a complementary flavour. In this sundae, the sauce is paired with vanilla ice cream, mermaid tears, and a cherry on top. It is simple but classic and allows the strawberry sauce to pop.

Summertime is when the fruit is naturally at its sweetest so the recipe has only a small amount of added sugar. If your berries are not flavour-packed or you want to throw a winter ice cream party, add a few more tablespoons of brown sugar to your taste. Other berries would also work for this recipe, such as blackberries or blueberries, though they may require some extra sugar.

Black Pepper Strawberry Sauce

Ingredients

  • 1 pound/454g very ripe strawberries washed and hulled
  • 1/4 tsp vanilla
  • 1 tbsp dark brown sugar
  • 1/4 tsp finely ground black pepper

Instructions

  • Add strawberries and 1/2 cup water to blender and pulse until smooth.
  • Pour strawberry puree along with vanilla and brown sugar in to a small pot and turn on heat to low.
  • Cook uncovered for 40 minutes, or until sauce has reduced by half and is sticky.
  • Add black pepper to taste once cooled. There should be only a hint of heat, it should not be overpowering.
