Lavender Shortbread Cookies

Shortbread is a buttery cookie from the UK. It’s often sweet, so I’m not 100% sure why it’s called ‘shortbread’ and not ‘shortcake’ (which is obviously a different dessert). From what I have read, the word ‘short’ comes from the crumbly texture of both shortbread and shortcake, not that they were made with shortening, which was a more recent food invention.

This shortbread is flavoured with a hint of floral lavender. You can use homemade lavender sugar instead of the icing sugar; just pulverize it in a blender, and omit the fresh or dried lavender flowers. And don’t worry, these lavender shortbread cookies do not taste like soap.

Ingredients
  • 1 cup salted butter, softened
  • 1 cup icing sugar (or you can use homemade lavender sugar and just pulse it in a food processor until superfine)
  • ½ tsp vanilla
  • ¼ tsp salt
  • 2 cups all-purpose flour
  • 1 Tbsp fresh lavender flowers or 1½ tsp dried
Instructions
  1. In a large bowl, beat together the softened butter, sugar, vanilla, and salt until fluffy.
  2. Stir in flour and lavender flowers until just combined.
  3. Divide dough into two discs; wrap in plastic wrap and let firm up in the fridge until firm but not hard, about 45 minutes.
  4. Working with one disc at a time, carefully roll out dough to about 5mm thickness. Cut out with a 5 cm cookie cutter, rerolling scraps as needed. You can also roll the dough into a rectangle and cut into bars.
  5. Arrange about 3 cm apart on cookie sheets lined with parchment paper. Refrigerate until firm, about 15 minutes.
  6. Repeat with remaining disc of dough.
  7. Meanwhile, preheat oven to 300F.
  8. Bake one sheet at a time until firm and golden, 20-25 minutes.
  9. Let cookies cool on the pan for about 10 minutes before transferring to a wire rack to cool completely.
