This broccoli salad, dotted with sweet red grapes and crunchy pine nuts, is tossed in a creamy, tangy dressing. Ryan’s mom made this back in December, and I finally got around to making it myself. I don’t know why it took so long, since it’s absolutely delicious! I love a bit of fruit in salad – in this case, red grapes. If you don’t have grapes, I’m sure apple slices would work nicely in this salad too.

One nice aspect of this salad is that you can make it ahead of time and keep it in the fridge until ready to serve. Normally you wait to dress a salad until right before it’s served, since the salt, sugar, and acid of dressings draw out the water (aka osmosis) from the vegetables, resulting in a soggy salad. However, that is exactly the point in this dish, since the acid makes the dressing juicy and the broccoli bright green.

Ingredients
  • ¼ cup mayonnaise
  • 2 Tbsp white wine vinegar
  • 1 tsp sugar
  • ½ tsp salt
  • ½ tsp pepper
  • 3 cups broccoli florets and stems
  • ½ cup red seedless grapes
  • ¼ cup pine nuts
  • Optional:
  • ½ cup crumbled fried bacon
Instructions
  1. Whisk together the mayonnaise, vinegar, sugar, salt and pepper in a medium bowl.
  2. Divide the broccoli into bite-sized florets. Peel the stems and cut into bite-sized pieces.
  3. Cut the grapes in half.
  4. Toast the pine nuts in a dry pan.
  5. Toss together the broccoli, grapes, and pine nuts in the mayonnaise dressing. Let marinate for at least four hours or overnight.
  6. Before serving, you can add in the crumbled bacon.
