This is an adaptation of a chickpea salad that Meinhilde used to make when we were younger. I can’t remember which cookbook she found it in, so I’ve reconstructed it from my spotty recollection (and input from Meinhilde’s excellent memory). This recipe is the first chickpea salad I ever ate and it may be one of my all-time favourites. Well,  I love any recipe that has cilantro and garlic.

I always try to work as many beans into my diet and this is such a easy salad packed with flavour. It would be great at a barbecue or a picnic. I need to warn you though that it has both raw onion and garlic, so be prepared for some strongly scented breath.

Cilantro and Chickpea Salad

Ingredients

  • 3 cups cooked chickpeas
  • 1/2 red pepper diced
  • 1/4 white onion diced
  • 1/2 clove garlic minced
  • large handful of cilantro roughly chopped
  • 2 tbsp good olive oil
  • 2 tbsp lime juice
  • salt and pepper to taste

Instructions

  • Toss all ingredients together.
  • Serve with crusty bread or black corn chips.

  2. This has so many of my favorite things in it! And it’s easy to make. I bet the cilantro really helps to cut the raw onion and garlic. I don’t even think I’d need a chip or cracker to enjoy this. 🙂
