Kiwi Halves

This is inspired by Saint Patrick’s Day, though none of the ingredients are remotely Irish.   I decided to use naturally green fruit and coloured accessories and just let the unique flavours shine through.

Happy Hour: Kiwi Elderflower Cocktail

Ingredients
  • 2 ripe kiwis
  • 1 oz Elderflower syrup (I used the one from Ikea)
  • 4 oz club soda (low sodium)
  • 2 oz Tanqueray London Dry Gin
Instructions
  1. Start by slicing out one round from the middle of each kiwi. This will be the garnish. Set aside for later.
  2. Scoop out the remaining flesh of the kiwi with a spoon and place in a mortar. Muddle with the pestle until the fruit is broken down into smaller chunks. I like to keep it in slightly larger pieces, so my guests know that their drink has real fruit in it.
  3. Mix fruit and other remaining ingredients in a a separate glass. Stir well.
  4. Pour into two in martini glasses, green ones if you have. Garnish with kiwi slices by making one small cut halfway through fruit and slide onto the side of the glass. Enjoy.
