Growing Vegetables in Winter

In the dry, dreary winter months, it’s a relief to see fresh green shoots growing right on your window sill. And it’s so easy to do! All you need are some veggie scraps, water, a small glass container, and a sunny window.

Celery shoots

So far we’ve had the best luck with green onions and celery, but carrots, lettuce, ginger, potatoes, and a variety of other veggies can be used.

Simply use the cut off base of your veggie and place it into a glass container (the glass gives fuller light exposure). For green onions, I wrapped a few stalks in an elastic band to hold them together and help them stand up. Fill the glass with a centimetre of fresh water and place on a window sill.

In a few days you will start to see the tiny bright green shoots breaking through. It’s so refreshing to actually see growth in the dead of winter. Moreover, these vegetables can be eaten! Simply use a kitchen scissor to cut off the fresh green tips of the green onion and they are ready.
