Citrusy Hearts of Palm Salad

Ingredients

  • 1 cucumber, thinly sliced
  • 1 can hearts of palm, approx 400g
  • 1 Cara Cara orange
  • 1 juicy lime
  • 3 tbsp olive oil
  • 1 small handful of cilantro

Instructions

  • Slice cucumber on a wide shallow serving platter. You can use a mandolin or thinly slice with a sharp knife
  • Open can of hearts of palm and rinse well. Slice tubes into 0.5cm rounds. Evenly place on serving platter on top of cucumbers.
  • Zest the orange on top of the salad. Peel rind off orange and divide into segments. Cut each segment into three and arrange on plate.
  • Zest the lime on top of the salad and then cut in half. Squeeze juice from both halves onto salad.
  • Sprinkle with the olive oil.
  • Roughly chop cilantro and sprinkle onto salad.
