Slice cucumber on a wide shallow serving platter. You can use a mandolin or thinly slice with a sharp knife
Open can of hearts of palm and rinse well. Slice tubes into 0.5cm rounds. Evenly place on serving platter on top of cucumbers.
Zest the orange on top of the salad. Peel rind off orange and divide into segments. Cut each segment into three and arrange on plate.
Zest the lime on top of the salad and then cut in half. Squeeze juice from both halves onto salad.
Sprinkle with the olive oil.
Roughly chop cilantro and sprinkle onto salad.
