Cthulhu Bumbleberry Pie

Ingredients

For the Crust:

  • 2 1/2 cups all purpose flour
  • 3 Tbsp sugar
  • 1 cup cold butter
  • 1 tsp salt
  • 4 Tbsp ice water
  • 2 egg yolks lightly beaten

For the Bumbleberry Filling:

  • 1 cup chopped peeled apple
  • 1 cup chopped rhubarb
  • 1 1/2 cups chopped strawberries
  • 1 1/2 cups blueberries
  • 1/2 cup flour
  • 1 cup sugar
  • 1 Tbsp lemon juice

Instructions

For the Crust:

  • Place the flour, sugar, salt, and butter in a large mixing bowl. Mix, with a pastry blender or two knives, until the mixture resembles a meal.
  • Slowly drizzle in the ice water and egg yolks. Stir to combine, making a dough. Lightly knead.
  • Form into two discs; wrap in plastic wrap and chill for at 30-60 minutes.

For the Filling:

  • Reserve two blueberries (these are for Cthulhu's eyes).
  • Mix all filling ingredients in a large bowl. Set aside.

To Assemble:

  • Preheat oven to 400 F.
  • Take one disc of dough out of the fridge.
  • On a lightly floured surface, using a lightly floured rolling pin, roll into a circle about 4-inch larger than the diameter of your pie pan. The dough should be about 1/8-inch thick.
  • Carefully transfer this dough circle to your pie plate. Press into place and trim any overhanging dough.
  • Pour the filling ingredients into the pie shell.
  • Take the second disc of dough out of the fridge.
  • Roll out the second disc of dough the same way as the first. Place the round piece of rolled dough over the pie filling and trim to fit the pie pan. Crimp the rim with a fork.
  • Reroll all the pie crust scraps and cut out eight long strips to act as tentacles. Cut out a round shape for Cthulhu's body. Cut out four small half-moon pieces to act as upper and lower eyelids.
  • Using the Cthulhu pieces and the two reserved blueberries, assemble pie-crust-Cthulhu, using our photos as a guide.
  • Take strips of aluminium foil and gently crimp around the pie rim, to prevent it from burning.
  • Bake for 20 minutes at 400 F. Reduce heat to 350 F and bake for 40-45 more minutes, until crust is golden brown.
  • Remove from oven and let cool for at least 10 minutes before serving.
