Add tea to a metal tea infuser and place over a one litre mason jar.
Pour boiled water into mason jar and allow tea to steep 10 minutes. If you use an herbal tea, you can allow a longer steeping time since it will not become bitter.
Add honey and lemon juice, give it a stir, and chill.
Once cool, pour tea into four glasses with ice. Garnish with sprig of mint and a pansy.
Serve immediately.
