Iced Tea with Mint and Pansies

Ingredients
  • 3 tbsp loose black tea
  • 1 lemon, juiced
  • 1 litre water, freshly boiled
  • 3 tbsp honey
  • 4 sprigs mint
  • 4 pansies
Instructions
  1. Add tea to a metal tea infuser and place over a one litre mason jar.
  2. Pour boiled water into mason jar and allow tea to steep 10 minutes. If you use an herbal tea, you can allow a longer steeping time since it will not become bitter.
  3. Add honey and lemon juice, give it a stir, and chill.
  4. Once cool, pour tea into four glasses with ice. Garnish with sprig of mint and a pansy.
  5. Serve immediately.
