This Caribbean tuna pasta salad has a tasty island slant to it. Tomiko had a high school friend from Jamaica, and this was something she made. It’s quick to whip up, and really easy to customize based on what you have on hand. Why not add some chopped avocado (right before you serve it, so it doesn’t oxidize and turn brown), more jalapeno, a tomato, or as much hot sauce as you can handle!
Caribbean Tuna Pasta Salad
Servings 6
Ingredients
- 500 g dried macaroni or rotini pasta
- 3 green peppers diced
- 1/2 red onion diced
- 1 jalapeno pepper minced
- 2 garlic cloves minced
- 2 tins canned tuna in water
- 2 Tbsp olive oil
- 1/2 cup chopped parsley
- 1 tsp seasoned salt anything from a crushed Maggi cube to stock powder
- hot sauce to taste
Instructions
- Bring a big pot of salted water to a boil over high heat. Cook pasta until al dente, according to the package. Drain and rinse with cold water, and set aside to cool.
- In a large bowl, mix all the vegetables, tuna, olive oil, parsley, seasoning, and cool noodles.
- Flavour with hot sauce, to taste.
Tuna pasta salad is a go to in our home during the hot Carolina summers. I like the avocado add in too. Thanks for sharing this at my party today. Sounds delicious.
