These hot, yeasted tea cakes are perfectly matched to luscious honey butter. Eating them makes me feel like a pioneer woman or something! This recipe uses a yeasted batter, but it only needs to rise for one hour. You can easily whip up these tea cakes and have them ready at teatime; just serve them instead of scones or biscuits with your favourite tea .
Tea Cakes and Honey Butter
Servings 16
Ingredients
- 1 1/4 cup milk
- 1 1/2 tsp dried yeast
- 1/2 cup butter
- 1 tsp salt
- 1/2 cup brown sugar
- 1/2 tsp cinnamon
- 3 eggs
- 3 1/2 cups flour
- 1/3 cupcinnamon sugar
- 1/2 cup butter softened
- 2 Tbsp honey
Instructions
- In a small pot, heat milk to lukewarm. Remove 1/4 cup of warm milk and place in a small bowl. Sprinkle yeast into bowl of warm milk and set aside for 5-10 minutes, until it blooms.
- Meanwhile, add butter to remaining milk in the pot. Heat until the butter is melted.
- In a large bowl, pour hot butter milk mixture over salt, 1/2 cup brown sugar, and 1/2 tsp cinnamon. Cool to lukewarm.
- Add the yeast and eggs to milk mixture, beating well.
- Gradually add flour and mix until the batter is smooth.
- Cover dough with a damp cloth and let rise in warm place for 1 hour.
- Meanwhile, preheat the oven to 350 F.
- Grease a muffin tin. Fill each until 1/2 - 3/4 full.
- Sprinkle 1 tsp of cinnamon sugar over each muffin.
- Bake 20-25 minutes. Serve warm with honey butter (recipe below).
Honey Butter
- Mix butter and honey. You can mess around with the sweetness to match your own preferences.
Give me these and I don’t need anything else. I love making honey butter especially to put on toast.
