Cabbage and Broccoli Slaw with Creamy Poppyseed Dressing

This cabbage and broccoli slaw with creamy poppyseed dressing has the delicious combination of sweet, tangy, and crunchy flavours and textures all in one bite. The cabbage and broccoli slaw can also be made a day before you plan to serve it without getting limp and ‘weepy.’

Vegetables can be expensive in the dead of winter – there were a few days this January where cauliflowers cost $9 each – so now I turn to affordable and local cabbage and carrots for salads in this cabbage and broccoli slaw.

Cabbage and Broccoli Slaw with Creamy Poppyseed Dressing

Ingredients

For the slaw:

  • 1 large carrot julienned (about 1 cup)
  • 1/4 head green cabbage shredded
  • 1 crown broccoli shredded
  • 1/2 cup dried cranberries
  • 1/2 cup pepitas

For the dressing:

  • 2 Tbsp poppyseeds
  • 1/4 cup mayonnaise
  • 1/2 cup Greek yogurt
  • 1.5 Tbsp sugar
  • 2 Tbsp apple cider vinegar
  • 1 Tbsp Dijon mustard
  • 1/4 tsp freshly ground black pepper

Instructions

  • Mix all the slaw ingredients in a big bowl.
  • In a small bowl, mix all the dressing ingredients.
  • Toss the slaw with the dressing and serve.
  • This salad can also be made a day in advance and stored, covered, in the refrigerator.

Slaws are very versatile, and this cabbage and broccoli slaw is no different. Try these variations or additions:

  • toasted, slivered almonds in place of the pepitas
  • shredded cooked chicken (from a leftover roast bird)
  • crumbled bacon
  • raisins instead of dried cranberries
  • red cabbage instead of green cabbage
