Donatello makes delicious arepas. Arepas are different depending on where they are from and since Donatello is from Colombia, he obviously makes Colombian ones. They are are cornmeal patties stuffed with cheese and then fried. The trick with these puppies is to use South American cornmeal, which has been precooked and is finer than other types of cornmeal. If you try making these with the wrong kind, you will end up with something very gritty, unpleasant, and half-raw.

Eat these with a thick slice of avocado and a hearts of palm salad. This recipe make 30 patties, which may sound like far too many, but don’t worry, you’ll be glad you made them all. Store extra cooked arepas in the refrigerator and toast them to warm up. Alternatively, freeze uncooked patties and fry them when desired.

Arepas: Colombian Corn and Cheese Patties

Ingredients

  • 1 package 1kg arepa flour (pre-cooked cornmeal)
  • 1 tsp salt
  • 1 tbsp brown sugar
  • 5 tbsp margarine 6 tbsp for frying
  • 2.5 cups water freshly boiled
  • 2.5 cups cold milk
  • 10 oz/ 280g grated mozzarella cheese

Instructions

  • In a large bowl, add milk and water. Slowly sprinkle cornmeal into liquid and mix with a wooden spoon. Be careful, the mixture is hot.
  • Add sugar, salt, and 5 tbsp of margarine. Mix again with wooden spoon. Add all of the cheese to the bowl.
  • Continue mixing cornmeal until it comes together and forms into a dough. Leave to sit for 10 minutes, but no longer as it will get dry.
  • Meanwhile, add 1 tbsp margarine each to two frying pans and heat them on medium.
  • Wet hands with cold water and take approximately a quarter cup of dough and roll into a ball. Flatten ball into 1cm thick round and place into hot pan. Continue making discs and fry each side approximately 5 minutes, until they are golden brown.
  • After each batch is fried, add another tablespoon of margarine to the pan and fry remaining patties.
  • Best served warm and crispy, but you can refrigerate them fully cooked and toast to reheat them.
