Tofu Dengaku

Tofu Dengaku is a tasty meatless dish where steaks of firm “cotton” tofu are topped with a flavoured miso paste and then grilled. Two teaspoons of sesame oil can be used in place of the tahini, but I find the oil makes the miso topping a bit too runny. The miso mixture a bit salty, but remember that the tofu itself is very bland, and this is meant to be eaten with a bowl of rice.

Dengaku refers to foods that have been glazed in a miso sauce and then grilled. We like to smear this miso mixture onto fillets of salmon and bake it in the oven, or onto halves of eggplant and steam-fry until cooked. Delicious!

Miso is a salty, umami paste made from fermented soy beans, and there are many varieties. Here I use shiro miso, or white miso, which is made with rice, barley and soybeans, and is a bit sweeter and less salty than red miso. It is not actually white, just lighter in colour that red or yellow miso.

Shinsho miso, or yellow miso, is fermented a bit longer than shiro miso. The flavour will be a bit stronger and saltier than shiro miso. Meanwhile, red miso, or aka miso, is aged and generally has a stronger flavour than both the white and yellow types. There are numerous other varieties of miso with different proportions of different grains and beans, so try a few and see which you like best. I find shiro miso is most versatile in my cooking.

Ingredients
  • 600 g firm tofu
  • ½ cup shiro miso (white miso)
  • 2 tsp sugar
  • 2 Tbsp mirin
  • ⅓ cup dashi stock
  • 2 Tbsp tahini
Instructions
  1. Combine miso, sugar, mirin and dashi in a small pot. Cook over low heat, stirring, until sugar dissolves. Add tahini. Remove from heat.
  2. Cut tofu into 2 cm slices. Place in an oiled oven tray and cook under a hot grill for about 3 minutes or until browned lightly.
  3. Spread miso mixture on top of tofu. Cook under hot grill for about 2 minutes or until miso is browned lightly. Serve.
